Are the Physical Deluxe & Collector's Editions still available?
Back in June, the Physical Deluxe and Collector's Editions of the games were announced, but these were limited in number and at this point, all the official shops have sold out.
It's possible down the line another version of these could be released, but if you really want one of them, your best bet is to buy second-hand on a site like Ebay or hope someone reserved you one as a gift.
Standard vs Digital Deluxe Edition: Which one should you buy?
This choice is really down to personal preference, but I would advise just buying the standard edition.
Here are the differences between the versions:

While he Digital Deluxe version gives you some exclusive stuff that you can early on, you'll likely upgrade to better stuff throughout the game anyway, so they're not really worth the extra $10/£10.
The only standout part of this version is the Selected Digital Soundtrack, but even that's not the full one, and based on the Steam description, you can only play the songs from in the game itself, meaning you don't get downloadable MP3s.
Pre-order bonuses
The only pre-order bonus for Black Myth is the Trailblazer's Scarlet Gourd item.
It's worth noting that pre-ordering lets you access this item earlier, but it's obtained naturally while progressing through the game anyway.
