The reason why the CM role is so tricky to fill is that players need a bit of everything in order to be successful.
Passing is obviously a must, but you'll need Shooting for when they crash into the box, Dribbling to carry the ball, Defending/Physical to win the ball back, and Pace because, well, Pace rules everything!
That's why the players here can largely play anywhere on the pitch, giving you a fantastic amount of flexibility when it comes to how they're used. While pace isn't everything, and certain players can prevail with the help of a Hunter/Shadow Chemistry Style, it's still an important part of their success on the field.

Best CM Player Roles
Picking the best Player Role for your CM very much depends on your tactics, but for most players, I'd recommend either the Playmaker or Box-To-Box.
These offer attacking capabilities, with the latter also offering stability in defence. You'll need quite the workhorse to properly take advantage of these roles though, as they'll spend most of the match running.
The Half-Winger Player Role could also be extremely strong if you're using Falseback RBs/LBs, as this will cover the space they vacate at the touchline, giving you plenty of flexibility and rotational movements.
