Shooting is undoubtedly the most important stat to consider with Strikers, as even those without the gift of Pace can be extremely effective like Harry Kane. All you need is to get them near goal and if their shot is strong enough it's bound to go in.
Pace is definitely a key consideration though, as is Dribbling and Physical. While not essential, it's also good to have a talisman who is comfortable passing the ball too - although that's more effective with certain Player Roles.

Best ST Player Roles
While the ideal Player Role for your Striker very much depends on their attributes, the best one overall is the Advanced Forward, as it gives the perfect hybrid between goalscoring and creation.
You definitely can't go wrong with a Poacher too, especially if you like to play down the wings with pacey players and pass it inside for a header or cutback goal.
Finally, if you like to play with two Inside Forward wingers then I'd definitely consider going for the False 9 Player Role, as this will bring them into play and allow them to flourish. This will diminish the scoring output of your striker, but it could very well be worth the sacrifice.
