The main benefits of the Premium Edition are undoubtedly the three days of Early Access and the story DLC, though the digital art book and exclusive outfit are a nice bonus.
We don't yet know the price of The Order of Giants DLC, but you could save money with this version, which does potentially make it worth it if you're planning on buying the expansion anyway.
Personally, I would recommend just getting the Standard Edition. You can live without the extra benefits of the Premium Edition, and it gives you a chance to see if you like the game before investing money in the expansion.
Is there a Collector's Edition?
Indiana Jones and the Great Circle does have a Collector's Edition for those looking to get their hands on some physical goodies. This version of the game contains all of the following:

- The Great Circle Globe with Hidden Storage
- Allmaker Relic Replica with Game Code (Digital Premium Edition)

You can purchase this version from the Bethesda Store website, but it appears many of them have sold out already. It could be restocked before launch, but Collector's Editions tend to sell out almost immediately.
Pre-order bonuses
For those of you looking to pre-order the game before it releases, you'll get The Last Crusade Pack as a reward. This contains the following cosmetics:
