Personally, I would suggest opting for the single-handed stance when perusing the world in order to have more speed against multiple enemies - although it can depend on the weapon you're using. A sweeping move will always be useful against hordes. When fighting bosses, though, going for a two-handed stance will help you make sure you're dealing maximum damage where it counts.
