In the original Resident Evil 4, you could save the wolf from the bear trap shortly after encountering the first ganado at the lone house you come across. The same exact moment appears in the remake too, except the wolf is found dead in the bear trap this time.

How to save the dog in Resident Evil 4 Remake
To save the wolf in the remake, you need to fast-forward all the way to the start of chapter three. At this point, you'll be inside a house after encountering Bitores Mendez. Once you head out the main door, you will hear a trap set off and a dog whimper coming from your right side.
If you head around the side of the house, you will see the wolf caught in the bear trap. From here, you can go over and interact with the trap to set the wolf free. Once it's free, it will limp a bit before dashing off into the wilderness. However, that's not the last you'll see of it.
Like in the original game, if you save the wolf from the bear trap, it will help you out during the boss fight against El Gigante in the Quarry. A little into the battle, a cutscene will play and the wolf jump into the arena, distracting El Gigante so you can get off damage much easier.
Once the battle is finished, the wolf will then perch itself atop some rock, and you can head over to say thank you before parting ways.
