How do you deface Ramon's portrait?
The quest needed
The request that asks you to deface Ramon's portrait in Resident Evil 4 remake is called The Disgrace of the Salazar Family, and can be found in the room with the gondola lift and the Merchant.
It asks you to deface of portrait of Ramon, and gives you the location of the room as a photograph, meaning you need to locate it yourself.
Luckily, the place in the picture is the throne room, which isn't very far away from where you initially locate the request.
After getting to the throne room, you will notice some chickens on the floor, and one of them will lay an egg, You need to pick this up and then equip it so you can complete the next step.
Defacing Ramon's portrait
With the egg in hand, look toward the left corner of the room, and you will see a portrait of Ramon. Simply aim the egg, and throw it directly at the painting. This will deface it, and you will get a notification informing you that you have completed the request.
Afterward, just head back to Merchant and speak to him so you can hand it in and get the Spinels as a reward.
