Zelda: Tears of the Kingdom releases on the eShop at 12 AM on May 12, US Eastern Time. The launch is simultaneous around the world, meaning while the launch is at midnight on release day for folks on the eastern American seaboard, the rest of the world will get the game at different local times.
For example, the game will be available at 9 PM PT on May 11, and 5 AM GMT on May 12. The further east you go in the world, the later in the day on May 12 the game will become available. Fans in Nintendo's home country of Japan will not be able to play Tears of the Kingdom until 1 PM on Friday, a good incentive to head to a store and buy a physical copy instead.
